In light of the Pox outbreak, and poor Desmond being laid up in bed, here’s a great soup to cure all illnesses (well according to most Cypriot mother’s that is)! Avgolemono soup is a type of thick broth flavoured with lemon juice and with egg beaten into it to give it that thick, creamy consistency and rich flavour. Afiyet olsun.
You will need:
1 litre vegetable or chicken stock
1 cup rice – long grain is fine
5 egg yolks – not whites
Approx juice of 2 lemons
Salt and pepper to taste
Preparation:
Bring the chicken or vegetable stock to the boil and add the rice. Stir from time to time until the rice is cooked then take off the heat and set aside. Separate your eggs, and using the yolks only whisk lightly with the lemon juice. Add a small amount of soup to the egg mixture and whisk in then add this to the soup, stirring constantly to blend well. Add salt and pepper to taste and serve with some bread and more lemon juice if required. If you like your soup fluffy then whisk up their left over egg whites and stir into the soup. Personally, I prefer it without.
